&lt;/span&gt;&lt;br /&gt;&lt;span rel="v:ingredient"&gt;100 gr di formaggio edam&lt;/span&gt;&lt;br /&gt;&lt;span rel="v:ingredient"&gt;50g prosciutto cotto &lt;/span&gt;&lt;br /&gt;&lt;span rel="v:ingredient"&gt;sale&lt;/span&gt;&lt;br /&gt;&lt;span rel="v:ingredient"&gt;pepe&lt;/span&gt;&lt;br /&gt;&lt;div&gt;&lt;br /&gt;Preparare l’impasto per il polpettone&amp;nbsp;disponendo&amp;nbsp;in una  terrina la carne macinata di vitello, un uovo, il parmigiano, il sale,  il pepe e 2 fette di pane precedentemente ammorbidite nell’acqua.&lt;br /&gt;Impastare fino ad ottenere un composto omogeneo.&lt;br /&gt;Mettere  il composto ottenuto su un foglio di carta forno, ricoprire con un  altro foglio e aiutandovi con un mattarello, schiacciate il composto&amp;nbsp; Mettere sul fuoco, appena inizia a sobbollire spegnere. Attendere che si raffreddi, poi aggiungere l'alcool. Dopo pochi minuti aggiungere 1/2 bicchiere di vino bianco, poi due cucchiai di salsa...lasciare cuocere qualche minuto...unire meno di mezzo dado per brodo , 200g di panna, un pò di acqua di cottura,se necessario.&lt;br /&gt;Il condimento è pronto! Mettere in frigo. Intanto preparare il ripieno.&lt;/p&gt;&lt;p&gt;Sbucciare una pera,privarla del torsolo,tagliarla a cubetti e rosolarla in un padellino con una noce di burro, un cucchiaio di zucchero ed un pizzico di cannella.&lt;/p&gt;&lt;p&gt;In una ciotola lavorare bene tre tuorli con 100g di zucchero, unire 300g di ricotta precedentemente passata al setaccio, 200g di mascarpone e 50g di gocce di cioccolato. Scolarli bene, metterli in un tegame con poco olio , aglio, prezzemolo tritato. Far cuocere a fuoco moderato per una decina di minuti. Unire il prosciutto tagliato a striscioline,salare e pepare. Taglialo grossolanamente a pezzetti e disponilo nel mixer con 4-5 gherigli di noce, 100 g di formaggio robiola, 1 cucchiaio di Sherry o di brandy, le foglioline di 1 rametto di timo, poco sale e una generosa macinata di pepe nero.&lt;br /&gt;Frulla a lungo, in modo da ottenere una mousse ben omogenea. Ho bucherellato i dischi e li ho fatti cuocere a 180° per dieci minuti circa( uno alla volta ). Intanto ho preparato una caffettiera  da due tazze e la bagna al rhum. Ho quindi preparato le creme al mascarpone( una con aggiunta di panna e scaglie di cioccolato) e l' altra al cioccolato. Poi ho assemblato la torta in questo modo.&lt;/span&gt;&lt;span style="color: rgb(51, 102, 255);font-size:130%;" &gt;&lt;br /&gt;&lt;/span&gt;&lt;span style="color: rgb(51, 102, 255);font-family:webdings;font-size:130%;"  &gt;Ho rivestito la  teglia in cui avevo preparato il dolce la sera precedente con la pellicola , poi ho messo un disco di pasta sfoglia, crema bianca ,la torta allo yogurt ( dalla quale ho tagliato un disco di 2 cm per non ottenere una torta troppo alta) dal lato bagnato con il rhum, poi ho bagnato il lato in alto con il caffè poco zuccherato, ho spalmato la crema al cioccolato e infine l' altro disco di pasta sfoglia. Ho montato da parte gli albumi a neve e poi ho unito al composto.Infine una bustina di lievito. Cottura in forno a 170 gradi per 30 minuti circa.&lt;/span&gt;&lt;span style="color: rgb(0, 0, 0);font-size:130%;" &gt;&lt;br /&gt;&lt;/span&gt;&lt;span style="color: rgb(0, 0, 0);font-family:webdings;font-size:130%;"  &gt;Ho diviso in due la torta e bagnata con bagna al rhum.Ho spalmato uno strato di marmellata all' albicocca.Sopra la torta uno strato sottile di marmellata e, sulla marmellata, salsa di cioccolato(cacao in polvere, zucchero, un pò di latte e un pezzetto di burro). font-family: arial;font-family:trebuchet ms;"&gt;&lt;li&gt;&lt;span style="font-size:130%;"&gt;Preparare un piccolo pan di spagna  sbattendo   4 tuorli  con 200g di zucchero, unire la farina e mezza tazzina di olio. Montare gli albumi e unirli al composto, infine aggiungere la bustina di lievito. Infornare a 170 ° per 40 minuti circa.&lt;/span&gt;&lt;/li&gt;&lt;li&gt;&lt;span style="font-size:130%;"&gt;Intanto passare al setaccio o in un passaverdure la ricotta, unire 4 cucchiai di zucchero a velo  e le gocce di cioccolato, mischiare bene.&lt;/span&gt;&lt;/li&gt;&lt;li&gt;&lt;span style="font-size:130%;"&gt;Foderare uno stampo  con il marzapane , dopo averlo impastato con un pò di zucchero a velo e mezza fialetta  di colorante verde. Per stendere il marzapane è consigliabile porlo tra due fogli di carta forno ed utilizzare un matterello.&lt;br /&gt;&lt;/span&gt;&lt;/li&gt;&lt;li&gt;&lt;span style="font-size:130%;"&gt;Tagliare a fette il pan di spagna e  coprire bene il marzapane. Bagnare con bagna al rhum(acqua , zucchero, rhum). &lt;/span&gt;&lt;/li&gt;&lt;li&gt;&lt;span style="font-size:130%;"&gt;Riempire con la crema di ricotta,coprire con altre fette di pan di spagna e bagnare . Lasciarli cuocere inizialmente a fiamma viva , poi abbassare la fiamma,salare,  pepare, coprire il tegame e lasciar cuocere per 20 minuti circa.&lt;/span&gt;&lt;/li&gt;&lt;li  style="font-style: italic;font-family:webdings;"&gt;&lt;span style="font-size:130%;"&gt;In un' altra padella far fondere 40 g di burro, adagiare i petti di pollo e far rosolare a fiamma vivace. Spruzzarli con succo di limone e vino bianco.
